Spicy Sausage Cassolette`

This is one of my very favorite dishes, it’s an adaptation of a french country peasant dish.  So be sure to cut your veggies up big and hearty.  I recommend serving with ice-cold beer in frosted mugs or a hearty red wine.  Great for football games or cold snowy days.  Enjoy.


What you will need:

  • 1 package (1lb-2lb) Hot Italian Sausage
  • 1 can stewed tomatoes
  • 1 can cannellini beans
  • 4 carrots
  • 3 stalks of celery
  • 1 med onion
  • 2 cloves of garlic
  • 1 cup dry red wine
  • 1/2 a loaf of crusty bread (italian works best)
  • Approx 1 1/2 tsp salt
  • Approx 1 tsp pepper
  • 1 1/2 garlic powder
  • 2 tbsp oil (olive or vegetable)
  • 1 stick of butter

What to do:

  • Pre-heat oven to 350 degrees
  • Add 1 tbsp oil to a frying pan and add sausage render or brown on med heat about 10 mins
  • In a med/large pot on med/low heat add 1 tbsp oil, roughly chop carrots, celery, garlic and onions and add with salt and pepper. *Add garlic last, after other veggies have softened a bit so it doesn’t burn
  • Add sausage and frying juices to pot of veggies
  • Add can of stewed tomatoes
  • Drain and add can of cannellini beans (there is no need to rinse the beans just drain most of the liquid from the can before adding)
  • Cook for 5 to 8 mins
  • Add wine and gently scrap brown bits from pot
  • Cook for another 10 to 15 mins
  • Shut off heat and transfer to an oven safe dish and set aside
  • Cut italian bead into large cubes
  • In a large pot melt stick of butter and add a dash of salt, pepper and garlic powder (not garlic salt).  Turn off heat and add bead cubes.  Toss gently until cubes absorb and are coated in garlic butter mixture.
  • Cover Cassolette’ with bread cubes
  • Place in oven and bake approx 10 to 15 mins or until bread cubes are crusty and lightly browned
  • Remove and enjoy!
