Wine braised pork

*This delicious dish is a crowd pleaser and can be made for under $20 including the wine!  I hope you enjoy it as much as my family has.

What you will need:

  • 1 Pork Shoulder Cut   *This is a great piece of meat for multiple meals or for feeding a large group of people.  You can get a large cut for around $10.  Cut it in 4 sections, use one section and freeze the other for another meal.
  • 3 Large Carrots
  • 2 Celery Stalks
  • 2 small to med size onions
  • 1 large clove of garlic
  • 1 small can of tomato paste
  • 1 1/2 to 2 cups dry red wine
  • 2 tbsp Vegetable/Olive Oil

What to do:

  • Pre-heat oven to 325 degrees
  • Add oil to frying pan or braising pan
  • Salt and pepper pork on all sides
  • Place pork in pan and sear on all sides on med to low heat until each side has a nice brown crust and pulls away from the pan without sticking
  • Remove pork and let it rest on a plate *if you are using a frying pan, you’ll need a separate pot to create the braising sauce and another oven safe dish that can be covered for the braising process
  • Roughly chop onions, carrots and celery and add to pot to soften *transfer oil left from searing if using a separate pot. Sprinkle with salt and pepper *approx 1 tsp of each
  • Finely chop garlic and add to onions, carrots and celery after they’ve softened for approx 5 mins * don’t add garlic too soon as it tends to burn before your other veggies soften
  • Add small can of tomato paste and combine well with veggies
  • Add a splash of wine to pan and gently scrap brown bits off pan
  • Add pork and the rest of your wine *liquid should cover about half of the pork
  • Remove from heat, cover and place in the oven for 3 to 3 1/2 hours checking and turning pork every hour.
  • Remove from oven and serve with sauce

*Goes great with my garlic mashed potatoes
